Biography

Sajad A Rather is a senior research fellow in the Department of Food Science and Technology, University of Kashmir, India. He is a masters (M. Sc.) and doctorate (Ph. D.) in Food Technology with specialization in animal products technology especially meat products. Qualified national eligibility test (NET) in 2011, through ASRB-ICAR. His 3 years of research experience includes Junior Research Fellow (2 years) and Senior Research Fellow (1 year). He has extensive research experience in quality and nutraceutical enhancement of meat products, use of enzymes in meat processing, isolation and molecular characterization of beneficial microorganisms from rumen intestine, milk products and vegetables, and microencapsulation of probiotic microorganisms. Member of American Society for Microbiology (ASM) and Association of Food Scientists & Technologists (INDIA) [AFST (I)]. Twenty publications in international scientific journals and reviewer of 5 international scientific journals.

Research Interests

Utilization of agriculture industry byproducts as food and feed additives.
