Biography

Adele Salomão-Oliveira is a PhD in health Biotechnology at the Federal University of Amazonas - FUA, Manaus, Brazil. She graduated in Nutrition at the Federal University of Brasilia, Brazil (1999), pursued a Specialization in Public Health at the University of International Technology, Boa Vista, Brazil (2009) and Master in Food Science at the Federal University of Amazonas - FUA, Manaus, Brazil (2015). She worked at public health center attending obese and their comorbidities adult patients, Brazil (2006-2024). Her research focuses on Experimental Nutrition and Food Analysis and she develops research, teaching and extension activities, as well as, in the nutritional characterization of Amazonian fruits and the evaluation of their functional properties, the in vitro e in vivo evaluation of their antioxidants effects on human health, improving non-contagious chronic diseases indicators, especially, on obesity and its comorbidities. She has expertise in the areas of food science and technology, food biochemistry, experimentation with animal models (rats and mice) and clinical research innovations with patients suffering from chronic non-communicable diseases, using Amazonian bioproducts.
