Biography

Mahmut DOĞAN, BSc, 1989, MSc, 1991, PhD, 1996, is a professor in the Food Engineering Department at Erciyes University, Kayseri, Türkiye. His responsibilities include teaching at both undergraduate and graduate levels, supervising MSc and PhD theses, conducting research projects (a total of 28 MSc, 12 PhD, and 60 projects), and providing consultancy to the food industry through knowledge and technology transfer. He worked as a postdoctoral researcher at the Department of Food Chemistry at the Technical University of Berlin. He was currently studying food chemistry, Maillard reaction products, food rheology, emulsion systems, and flow properties of powdered foods.

He was awarded the Science Success Story by the Scientific and Technological Council of Türkiye for his outstanding work in the field of Food Science and Engineering. and received a certificate of appreciation and academic performance award from Erciyes University Rectorate and Dean of the Faculty of Engineering.

To his credit, Prof. Doğan has published over 120 articles based on original research, 143 presentations, and 2 book chapters. As of June 2025, his publications have been cited more than 2.500 times in Scopus (h-index 30), 3,228 times in Scholar (h-index 34).
